As our climate changes, so too do our sources of food. Those changes might be imperceptible at the moment, but the warning signs are already visible in our oceans, where acidification, toxification, and overconsumption are already reshaping marine ecology. So what might a seaside supper look like in thirty years? Will we turn to overlooked sources of nutrition, or synthesize new ones? How will we continue the search for novelty and aesthetic pleasure under new constraints? The Bellwether hosts author Alexandra Kleeman in collaboration with experimental food artist Jen Monroe as they imagine an evening of tastes flavored by a world just around the corner – one that might be here before we know it.
