From our organizers:
Join us for a vinegar-making, tasting, and talk with food artist Michael Harlan Turkell. An avid maker of vinegars at home, Harlan Turkell traveled throughout North America, France, Italy, Austria, and Japan to learn about vinegar-making practices in places where the art has evolved over centuries. In this 1.5 hour class, learn methods for making your own vinegars with bases as varied as wine, rice, apple cider, and honey; how to discern between vinegars; and cococt and taste your own shrub-based cocktail or spritzer.
ACID Trip: Travels in the World of Vinegar is the WINNER OF THE 2018 IACP Culinary Travel cookbook award.
Recipes to be made during class: Tomato-Tarragon Shrub Soda/Cocktail, Pinzimonio, Green Apple and Fennel Salad with Apple Cider Vinaigrette, Massimo Bottura’s Frittata with Balsamic Onions
