If you’ve mastered your 8″ chef knife and you’re thirsty for more knowledge, this is the class for you! Your class ticket includes a whole chicken and a whole fish at the start of class (valued at $50 worth of protein). Under the watchful eye of our instructor, you’ll learn how to break down a chicken for everything from paillards, to tenders, to cordon bleu…making sure you are getting the most out of your bird. And the same goes for the fish! Learning how to break down a whole fish is the best way to know you’re getting the freshest cuts and the most for your dollar. You’ll get ample time to practice, and you get to take home the proteins you cut. Your instructor will also impart his knowledge of how to make stock, so you can even use the bones!
