Taste the Rainbow: Collaborative Brewing “Rainbow Project” Tomorrow at Tørst

Tasting the rainbow has had the unlikely trajectory of becoming more appealing as I grow older. My grandmother warned me never to eat anything blue from the time I was old enough to differentiate color. Tasting the Skittles rainbow as a pre-teen was fun for about five minutes until they started getting stuck in whatever configuration of mouth gear I had at the time.

Then in college I read Michael Pollan’s Food Rules (thanks, Mom!) and eating the rainbow became a very serious matter for awhile. This week my relationship with rainbow consumption has reached peak fun: Tørst is hosting the NYC edition of the Rainbow Project, an annual international collaborative brewing project where participant breweries are tasked with making beer inspired by colors of the rainbow. The project is the brainchild of Ryan Witter-Merithew, head brewer at Siren Craft Brewery in England.

Tørst is tapping all kegs at noon, but the real fun starts at 7:00 p.m. This is the only bar in the U.S. that will be hosting all seven of the beers, and to celebrate they’ve invited the brewers from Evil TwinBuxton Brewery Company and Magic Rock Brewing to visit with guests and talk about the creative process. I’m particularly excited for Hawkshead Brewery’s Green Juniper and Hemp Double IPA and Beavertown’s Sherry Barrel Aged Saison.
